Healthy Apple Muffins

Healthy Apple Muffins (Shoo away the Doctor)
Ingredients: 1 cup unsweetened applesauce, 8 dates, ¼ cup avocado oil, 2 eggs, 1 tsp vanilla extract, 2 cups whole wheat flour, 2 tsp baking powder, 1 tsp baking soda, 1 tsp all spice, 1 tsp cinnamon, ½ tsp nutmeg, ½ tsp cloves, ½ tsp salt, 1 and a ½ cup sweet apples, and cooking spray.
Cinnamon Sugar Topping:1 tbsp cane sugar, and ¼ tsp cinnamon.
Cooking Method: Preheat the oven to 350F and spray cooking spray on the baking pan. Take a food processor, add all the wet ingredients in it and mix them well. Make sure that all the dates are blended perfectly. Now take a small bowl, add the ingredients mentioned in cinnamon sugar topping section and mix them well. In the next step, take a large mixing bowl, add all the dry ingredients in it and whisk them well. Now combine the dry ingredients mixture and wet ingredients mixture and mix them until combined. However, do not overmix the mixture otherwise, the muffins will not rise. Fill the mixture ¾ in the tin, sprinkle cinnamon sugar topping and bake the mixture for 25 minutes.
